I loooove, love, love breakfasts!
But what does this have to do with it? Well, this:
Today is the last day of the year. And it’s the “Uh, the memories of 2014!”, “Oh, the lessons!”, “Yay, the accomplishments!” day of the year. Yet, what would it be without a good, homemade, enjoyed breakfast? Oh, well, a typical day when you don’t have the time to enjoy it. A sad day. Haha. Nop, just a real life normal day. So breakfast to me is celebration. It means it’s either Saturday, Sunday or holidaaaay!
This is one of the recipes that will for sure make you look good on New Year’s Eve. There is an amount of joy that comes from the stomach, scientists say. And it ain’t about butterflies this time around. It’s about this:
For one “Yum sandwich” you need:
2 slices of bread
2 slices of bacon
Philadelphia cheese
1 egg
baby spinach
For sauce Hollandaise (this is the best you can have and the easiest you can do) you need:
freshly squeezed lemon juice from 1 lemon
2 yolks
4 spoons of butter
The sandwich: Slices of bread in the toaster -> fry the bacon in a olive oiled pan -> get the bread out and put the Philadelphia cheese on it -> then the baby spinach -> get the bacon out and put it on top of the spinach -> oil the pan again and fry the egg -> salt, pepper -> get the egg onto the bacon -> pour the sauce -> top it with the second slice of bread
In the meantime, you find the time to make the sos Hollandaise: melt the butter for a couple os seconds in the oven -> squeeze the juice out of a lemon and put it in the butter -> add the fresh yolks -> mix with a fork and this is what should come out of it (this is for 3. Still if you follow the instructions for 2, believe me it won’t be a waste. It is delicious!):
And the grande finale:
And all this while sipping a good black tea with honey and lemon in the meantime.
Corina, thx for the recipe!
Oh, I am ready, 2015!
